Rice flour is rich in complex carbohydrates,
a source of protein and minerals and has no cholesterol. Rice flour contains 80% starch, but it is considered hypoallergenic, unlike gluten, due to the proteins associated with it. Protein is the second most abundant component in rice flour despite the fact that this is one of the cereals with the poorest protein content. The lipid content is quite low, but they are of great importance both nutritionally and with respect to the physical characteristics they provide. Other components of rice flour are fiber and minerals. Iron, potassium, phosphorus and magnesium are the most important minerals in its composition.
